Good evening friends.
It’s a Saturday night and I should be
starting catching up on my course readings and practicing nomenclature.
But instead, Sophie and I are chillaxing out the best we can while watching Restaurant Impossible and blogging.
Life is good.
Ok. So. Even though the most part of today has been pretty uneventful there was one KIND OF eventful…event? that took place.
If you can’t read the numbers on my Forerunner 205 then I’ll make it a little easier for you: I ran seven (seven!) miles today without dying or wishing I was dead.
Dear Charlottesville half-marathon, I”m coming for ya!Â
Venturing into earlier this week’s happenings in a picture word ratio of 2:1…
Sautéed zucchini, grape tomatoes, baby spinach, onions, deli turkey, and lentils, in beef broth
The most delicious leftover concoction known to my taste buds. Wowzahs.
What a pleasant surprise.
Arrival – Wednesday afternoon
Departure – last night
Devoured way too soon. (With a little bit of help from Caroline.)
Pear Chobani (Yes it does exists. I freaked out, also.), strawberries, Love Grown granola
It has been way too long my friend. Way too long.
Turned into this:
I partook in Peanut Butter Fingers’Â crockpot challenge and well…
It was awesome. Recipe soon to come!
Said recipe to come makes for a dank salad.
And because everything ends on a good note…
Roasted Brussels sprouts, sweet potato, and leftover falafel
Good note meaning the trifecta of deliciousness.
I’m not the only one licking my lips. 😉
