What I Ate Monday

Good morning and happy Tuesday!

For today’s post I’m going to share what I ate Monday with a few other things thrown in the mix. Let’s get started shall we?

Breakfast – 9:30 am ish (I got to sleep in!)

Kashi GoLean Crunch + Kashi Maze + strawberries + PB2 + organic dried cranberries and apples + unsweetened almond milk

Coffee followed naturally.

 

Lunch – 12:30 pm

Zoe’s Greek salad – no potato salad, extra veggies, feta on the side – with Newman’s Own Lite Balsamic Vinaigrette 

Sooo good and I swear the people at Zoe’s Kitchen know me by my order. It’s very unlikely I don’t have this salad at least once, sometimes more, in a week. After my lunch I had a dark chocolate Adora calcium disk.

 

Snack – 4:00 pm (after TurboFire EZ 45 workout DVD – my fav)

organic apple + 2 spoonfuls Justin’s honey and PB blend

This stuff is my jam right now. I just can’t get enough of it. I’m convinced peanut butter and apples were totally made for each other. Also, really looking forward to having an empty peanut butter jar for the first time ever so I can try some of Courtney’s oats in a jar.

 

Dinner – 7:00 pm

So dinner started off looking like this ^…

And then I steamed up some broccoli and a tomato…

Tossed veggies with frozen entree and added 1 T Newman’s Own Lite Honey Mustard dressing and viola!

I’m typically not a fan of frozen meals but college life calls for them sometimes. I try to stick to all natural and organic so I lean towards Kashi, Amy’s Kitchen, and Love Bowls brands. All of them are super delicious but have some room to be made better which is were I step in. It’s really easy to volumize and enhance the flavor of a frozen dinner with some extra veggies, dressings, salsa, and spices. Guess that’s as far as my cooking goes via dorm room.

After dinner I had a small handful of dark chocolate covered raisins. I really never go without some form of chocolate throughout the day. 🙂

 

Before Bed – 9:00 pm

A nice mug of hot tea to put me to sleep. 😀

 

I’d like to end this post with a picture of my soon-to-be neighbor…

Can you see him? Mom thought he was just a piece of copper pipe but I knew better. He lives across the street from the townhouse I shall be residing in for the remainder of college. Pretty cute ground hog, huh? 😉
