Happenings + Banana Bread with Raisins Recipe

Good morning peeps.

Let’s dive right in to yesterday’s happenings.

 

Breakfast

This is a recycled photo but basically the same thing as yesterday: Greek yo, strawberries, Kashi, Newman’s Own Flax Flakes, and shredded coconut.

I got a Monday morning 5:30am wake-up call from this little ball of fur…

As of this very second I have officially decided that his name is Sir Winston Churchill. Sir, Winnie, Win, Winst…all good one syllable nicknames to call him by. I considered Sirius Black and Severus Snape but when he looked back at me, those names just didn’t fit. Haribo was my second choice after Haribo Gold-Bear because he’s identical to a gummy bear. In the end, Winston wins.

 

Workout

This morning I took a yoga class downtown; fueled by a mini cashew cookie Larabar. The perfect little bite.

This morning’s class was iiiiiincredible. Every class at Yoga Bliss Tuscaloosa is bomb but Monday morning with Kate especially.

Lunch

Once I got back from yoga I immediately got started on lunch.

On the menu: curried sweet potato chickpea burger (recipe coming soon!) that I mashed/spread onto a whole wheat tortilla with goat cheese, balsamic drizzle, and fresh basil then pressed on the panini maker. Served up alongside sautéed broccoli and zucchini.

A delicious lunch indeed.

After I finished eating I did a few chores around the house, taking breaks in between to read The Happiness Project.

I highly recommend this book! I’ve only read through part of chapter two and it’s already amazing.

 

Snack

I anxiously awaited for my mid-afternoon hunger to kick in so I could have this snack. PB + cinnamon and apple slices is where it’s at ladies and gents. Where. It’s. At.

I did some more chores + reading and then ran a few errands before going out for dinner.

And whaddya know, I forgot to snap a picture of my meal. I even forget to take a picture of the restaurant we ate at. (BTWs De Palma’s house salad with chicken and croutons is one of the best salads in Tuscaloosa.)

Banana Bread with Raisins

Ingredients

  • 1 c. whole wheat flour
  • 1/2 c. rolled oats
  • 1/4 c. flaxseed meal
  • 1/3 c. sugar
  • 1 1/2 tsp. baking powder
  • 1 tsp. baking soda
  • 2 tsp. ground cinnamon
  • 1 tsp. ground cloves
  • 1/2 tsp. salt
  • 2 medium bananas
  • 1/3 c. plain Greek yogurt (vanilla or banana flavor would be good, too)
  • 1 egg
  • 1 tsp. vanilla extract
  • 2 Tbsp. honey
  • 1/2 c. raisins
  • 1/2 c. chopped walnuts (optional)

Directions
Preheat the oven to 350* and spray a 9×5″ baking pan with nonstick spray. In a large mix bowl mix together all dry ingredients and set aside. In another mixing bowl, add bananas and mash with the back of a fork and then add remaining wet ingredients and stir to combine. Add wet to dry and stir just until incorporated. Fold in raisins and other optional ingredients then evenly pour into baking dish. Bake for ~40 minutes or until a toothpick can be inserted and come out clean. Let cool and enjoy with a generous slather of peanut butter!

Quite a Thursday

Hey there friends!

My mom came down earlier today to hang out before my dad makes his way down in the morning and then all three of us head to Baton Rouge. Needless to say, I’ve had quite a Thursday!

Breakfast

Yesterday toast + PB + nanner; today Greek yogurt + fruit + granola. Why change what ain’t broken, right? Today’s yogurt bowl went sans PB. Gasp, I know, but my nut butter stash is running free viagra samples low and nothing else sounded good so I opted for chia seeds and Bare Fit granola instead.

Workout 1

After CrossFit and date with my foam roller last night, I was feeling better than expected so I went for a quick and easy mid-morning run.

Forgot my camera or else I would have more pictures. It was so so pretty outside today and just perfect for running.

Lunch

For lunch I threw together roasted Brussels sprouts + sweet potato, a can of diced tomatoes, two wedges Laughing Cow cheese, and balsamic glaze. The can of diced tomatoes was out of the ordinary yet really good.

Seasoned everything with a generous amount of hot curry ’cause I like it spicy. 😉

I crumbled a couple pieces of bran crispbread on top for a little texture and a tasty lunch it ’twas.

P.S. Those bran crispbreads are a staple in my pantry — perfect as croutons in a salad.

Almost immediately following lunch I had a tiny bowl of yogurt covered raisins. I swear it’s like I HAVE to eat them if they’re in my possession. Sooooo good!

Once I polished off my raisins covered in goodness the doorbell rang and Mom and Sophie were here, yippee.

Once Mom put her things down we headed out the door to run a few errands.

I upgraded my phone — yay for the iPhone 5! –and then we walked over to Manna Grocery to browse around. Of course we bought more than browsed but that’s just what happens when you take me to a health foods store.

Scored some local strawberries that I’ll be devouring tomorrow morning for breakfast.

Snack

My stomach was rumbling after running errands so I made myself a snack. Apple slices and a piece of a peanut butter cranberry bar I snagged at Manna hit the spot.

Workout 2

My mom is recently a yogi so we hit up Yoga Bliss for what was suppose to be a hot class but they were having problems with the furnace. Imagine the heating and cooling people getting a phone call during summer in Alabama complaining about the furnace not working, haha.

Anyways, the class wasn’t hot but it was still great.

Dinner

After yoga we walked up the street to Big Daddy’s for dinner. Greek salads, hummus and pita plus this little gem to go…

WIAW: The Juicer is Back

Happy Hump Day my friends!

This is a great product, I like that it comes in a blister pack and does not need refrigeration. Viagra cheap. That is why we pay attention to the quality of the medications.

Last week I shared my Wednesday eats on Thursday and this Wednesday I’m sharing my Tuesday eats. Either way it’s WIAW!

Breakfast – 7:30 am

Greek yogurt + museli + chia seeds + banana slices + blueberries + Love Grown granola + Barney Butter 

It’s baaaaack! Still loving this morning meal so in attempt to not get tired of it I switched to Kodiak Cakes this morning. As for tomorrow… 😉

Lunch – 12:30 pm

Since my mom was here yesterday, we walked up the street to a favorite spot of mine – Hooligan’s. They have an awesome Mediterranean menu as well as burgers and spuds. In other words, lots of delicious variety!

Their mint teas are off the chain. I highly recommend mixing unsweet & sweet for the perfect drink.

Spring mix + roasted sweet potato & broccoli + Hooligan’s chicken & warm pita + feta + red onion + balsamic reduction 

Since my fridge has been recently stocked up with produce and etc. I only ordered a side of chicken and sautéed mushrooms (<— the best). Chicken for yesterday’s salad, ‘shrooms for today’s.

Snacks – 3:00 pm & 5:00 pm

Trail mix — raw almonds + TJ’s cashews + dried cherries + dark chocolate chips

My food science lab is from 2:00-5:00 pm and I always get hungry somewhere during that time. Usually I bring a bar of some sort but when I reached for one on the way out yesterday I realized there were none left. Gasp! No worries, I threw this little trail mix together in a snap.

Other 1/2 banana from breakfast + diced pear + sunflower butter microwaved for one minute

My intentions were to only have the banana half to tide me over until I juiced (!!!) dinner but the Sunbutter was literally screaming my name. What else could I have done? Nothing.

Workout – 6:30 pm

Again, I had specific intentions that I ended up veering away from. My plan was to go to a hot yoga class at Yoga Bliss from 5:30-7:00 pm but then I was suddenly reminded at 4:30 pm that I had an online Music 121 quiz due by 5:30 pm so those plans were shot.

Forty minutes with Rodney Yee was a great substitute so I’m not complaining. Plus, now I have an extra yoga pass for another time. Woohoo!

Dinner – 8:00 pm

Juice of: 1 broccoli stalk + 1 small beet + ~ 1 cup baby carrots + 1″ ginger + 2 small apples with a splash of coconut water mixed in 

I reeeeaaaallllllly want to do a juice detox but I just don’t have a conducive schedule. So, juice dinners might be in order!

To me, this juice tasted really good but I know if my mom had a sip a look of utter disgust would immediately cover her face. Eh well, to each their own, right?
