Wednesday Words {of wisdom} + #stoopidheadforever

Goooood evening and Happy Hump Day everyone!

You may wondering what I’m getting at with this post so let me explain…

Since my post about deciding to move forward from my disordered eating and body image issues I thought it might be pfizer mexico viagra cool to share what I’ve learned thus far during my struggles and triumphs. So to start of my Words of Wisdom, I’d like to say that this is not about “turning over a new leaf”.

Actually, it’s quite the opposite. Which brings me to my first realization:

No more turning over new leaves. 

You see, every time I felt as though I had ruined my diet or workout regime I would immediately say to myself “Ok, it’s time to turn over a new leaf and get a fresh start on a new you”!

What’s so bad about that?

Well, it becomes a problem when you’re continuously having to turn over a new leaf. I ended up putting myself in a constant cycle of one extreme to the other because I was set on perfection which, in the end, only led me to failure. 

I have decided that my Peachy Post will be the last leaf I’m turning over on my journey to a healthy balanced lifestyle. The point that I’m getting at is there is no such thing as perfection. Mistakes are part of life and an indulgent dessert or missed workout is not the end of the world!

Got that? Good.



(Pretend that one of those is crunchy almond butter and the other is cashew butter.)

It seems most of the morning meals ’round these parts are either Greek yogurt + fruit + granola + PB or toast + nut butters + banana slices. Just pointing that out because, if we’re being honest here, it probably won’t change for a while.

Snack Part One


A little before lunch I snacked on a handful of grapes to tide me over. It’s been a while since I’ve eaten grapes and I swear I forgot how good they are. Mmm, so sweet.



Since I’m a lazy butt and didn’t make a trip to the grocery store before lunch I was forced to throw together what I already had on hand. Thankfully, I had baby kale that was still good chillin’ in the fridge as well as a VitaPizza, frozen peas, and marinara sauce. I am aware that the combination of all of those may not sound so appealing but lemme just tell ya, it was delicious.

Snack Part Two


After lunch my snackiness struck again! Part two included a teeny tiny apple and a generous “few” yogurt covered raisins.


Today was a CrossFit kinda day so I laced up my new Reebok Sublites and headed to the box.



20 push ups
20 pass throughs
20 sit ups


10 rounds for time:
10 wall balls @ 20/14
10 burpees

Score: 18:21

If a WOD looks easy then it’s going to kick your ass. Every. Single. Time. In case you aren’t that great with numbers, 10 rounds of 10 wall balls and burpees adds up to 100 each. In other words, there will be a lot of foaming rolling going on once I’m finished with this post.

Snack Part Three


As soon as I got back to my car after CrossFit I tore open a Kashi granola bar for some refuel. You know you had a good workout when it’s difficult to eat a granola bar…


After CrossFit I finally made a trip the Publix to pick up a few things for dinner. Normally I would have made a grocery trip to stock up for a week+ considering the state my kitchen is in but I’ll be heading out of town AGAIN on Friday morning so this trip’s bounty was light.

On the menu for dinner was spring mix, roasted Brussels sprouts, Mediterranean lentil salad, and goat cheese. Oh and can’t forget the balsamic glaze!

Other Things of the Day

Whilst snacking on a handful of grapes before lunch today a Twitter notification popped up in the corner of my screen. In awe I clicked to make sure what I saw was real…

As mentioned earlier, I’ll be leaving town yet again.



Turns out the fam jam (read: Mom and Dad) and I are trucking over to Baton Rouge to meet up with the cuzzo for the Bayou Country Superfest. Since I’m a Hootie fan and all (duh) I’m most excited about seeing Darius Rucker. Bonus: Wagon Wheel is one of my all time favorite songs so I’m pumped to see Darius play his cover of it live. Life is just too good.

Time to wind down with a little HGTV and foaming rolling, yo. Hope you had a great Wednesday! Nighty.

Silly Me

Whadduuup peeps?

As of right now I am doing laundry, listening to Slightly Stoopid, and packing a bag for home.

Oh, Scottsboro, I haven’t seen you in quite a while…

So you get the point. I’m a little home sick.

Breakfast wasn’t all that good lookin’ this morning but it generica viagra sure was tasty.


After breakfast, I did some studying in preparation for my PPT practical exam. Did you know tight hamstrings can cause lower back pain? Well, I had no idea but it makes loads of sense. My hamstrings are extremely tight and I do experience lower back pain after certain exercises.



Lately I haven’t been feeling so good. I woke up the other morning with a sore throat and it really hit me hard this morning so I had some vitamin C in attempt to feel better. However, during class the other day my professor said that some studies say vitamin C doesn’t actually help cure the common cold. Hmm.



It’s missing something…


Ah, yes, balsamic vinegar reduction! Honestly, I don’t think I go a day without the stuff.


Spring mix + chicken breast + shredded carrots + fresh beet + grape toms + red onion + cucumbers + feta cheese + slice Ezekiel + balsamic vinegar & balsamic reduction 

Whoa baby was this salad huuuge! At one point I even thought I might not be able to finish it. Pah, but of course I finished it…silly me.

If I didn’t go to crossfit today then I probably would have gone sans snack before dinner. My ginormous salad from lunch really held me over but I knew I need a little something before getting my WOD on.

Sheesh. Today’s workout was serious. It was one of those that makes you feel like jello afterwards. So much that I could hardly hold my blender bottle while drinking my favorite post-workout drank.





Just when you think it’s ready to dig into…


Sautéed spinach, basil, & grape toms in beef broth + re-roasted rosemary butternut squash + goat cheese + balsamic 

Add goat cheese to the list of Things I Don’t Go a Day Without.



Mmm and a palate cleanser to end the night.


As well as some quality face-timing with the cousin (I wish I took a screen shot of our face-time, his beard is ridic!) and stretching/muscle rolling.

Goat Cheese, Hummus & Basil Stuffed Chicken

Good evening/good morning (depending on when you’re reading).

As always, let’s start with breakfast.

Breakfast favorite is back again!

So, instead of guesstimating all of the measurements in my breakfast this morning, I took the time to measure everything out and enter them into MyPlate. The grand caloric total ended up being approximately 390 kcals. Perfect number for me. Perfect number for you? Who knows.





Spring mix + cucumber + grape toms + red onion + feta cheese + roasted butternut squash + smoked turkey + crumbled slice Ezekiel bread + Greek vinaigrette 

Again, I took the time to measure everything and track my lunch in MyPlate. Lunch ended up being around 400 calories. Yet again, a number I am satisfied with. Satisfaction also occurring from the delicious salad. 🙂



Sliced apple + raw almond butter


MaraNatha’s raw almond butter is officially my favorite nut butter at this point in my relationship with nut butters. Seriously stuff is goooooood.


However, when I checked the ingredient list I was a bit disappointed. This jar coming in at around ten bucks a pop contains only one ingredient. Alright so, the problem?

I CAN MAKE IT MYSELF and spend ten dollars on something else. Like organic produce because that shiz is pricey, too. Recipe coming soon…

Side note: I had a dried date as I was headed out the door to crossfit. So good yet so ugly… Poor little dates.

Today was the first time I did a hang snatch hence the light weight load. During the WOD, one of the other girls was snatching 65 lbs and boy was she fighting to bang ’em out but with everyone cheering her on she finished Rx. That’s the kind of stuff that motivates me to go past my comfort zone and make improvements.

Goat Cheese, Hummus & Basil Stuffed Chicken


*serves one Health Nut

  • 1 chicken breast
  • 1 Tsp hummus (original flavor)
  • 2 Tsp goat cheese
  • 2 leaves basil, roughly chopped
  • EVOO
  • S&P


Preheat oven to 375*. Butterfly chicken breast, rub with EVOO, season with a little S&P, set aside (on a sheet pan or baking dish). Next, mix together hummus, goat cheese, and basil. After that’s done, stuff the chicken! Roast for a sold 30-35 minutes or until cook through. Easy.

*Simply double, triple, or quadruple ingredients for desired servings. 🙂





Serve alongside some pan seared beets, sautéed spinach, and a drizzle of balsamic vinegar reduction for a complete and flavorful meal. 😀

Having Confidence in My Abilities

Good evening friends.

After my long day yesterday, I was flat out exhausted so I got a solid nine hours of sleep last night. I swear that race made me feel hungover! Luckily, when I woke up I was craving a nutritious breakfast instead of an Advil.


Greek yogurt + museli + Love Grown granola + banana slices + blueberries + chia seeds + splash unsweetened almond milk all packed in a leftover PB jar 

This breakfast is back yet again. Don’t be surprised if it makes a few more appearances throughout the week.

Since the parents are in town for a few days we ate out for lunch. No pictures but we went to Depalma’s Italian Cafe downtown — home of some of my favorite salads.

After lunch I did some reading for my classes before heading to the box.

CrossFit has been such a refreshing boost of confidence. Not only am I proving that I can do things I didn’t believe possible; I’m not half bad at them, either!

With that being said…

This rings true for so so many aspects in my life. Hopefully this quote with give you motivation to be confident in your abilities, also.

You know what a nearly empty salad container means? No dishes and an easy clean up. Score!



This salad was asking for roasted veggies so I complied.


Ah and my favorite part of roasted Brussels sprouts.


The little layers that fall off and get super crunchy. Mm mm mmm.

Finally! Mom brought me some balsamic vinegar reduction — perfect on just about anything.

Tasty Tuesday

What is up everyone? Such a lovely day on this fine Tuesday.

This morning when I was leaving the house it was still yucky outside so I chose my rain jacket over my sunglasses — total mistake because the sun is finally out and shining.

Breakfast was enjoyed while walking to my 8:00 am chemistry lab thanks to my alarm neglecting to go off. Don’t you hate that? Thankfully, I woke up and 7:07 am, had a mini panic attack, and then got myself ready and out the door by 7:36 am. Oy.



Steamed sweet tater & zucchini + leftover Jim N Nick’s smoked turkey & croutons & BBQ sauce (< weird flavor alert) + goat cheese

Lunch was probably one of the weirdest flavor combinations ever — and I’ve had some pretty strange combos — but it turned out delicious!



Grande skinny vanilla latte (new Starbuck’s favorite) + dried apple 

On Tuesdays after my chemistry lab I usually head over to Starbuck’s and this morning was no different.

I also had a trail mix Mojo bar during my food science lab as a little fuel before my run and then the other half of banana from breakfast after my run. Neither of which that got photographed. Whamp whamp whamp.

Workout – (Monday & Tuesday)


Yesterday I made it to the box for a lovely WOD. Please make note of the Rx’d at the bottom. Thank you.


Here’s today’s run. Originally I had planned on going at least 5 miles with the hopes of 6 miles but my legs were dead from yesterday so I cut it off at 3.4 miles. Good enough for me considering I have quite the load of chemistry to study tonight. Bleh.



Roasted acorn squash & Brussels sprouts + pan seared salmon + drizzle balsamic vinegar

So this meal pretty much rocks. I say that because I’m still eating it and wishing it will never end. Fingers crossed.


Salmon seasoned with S&P, fresh thyme pan seared with some EVOO and then thrown under the broiler.



Acorn squash halved and seeded then seasoned with EVOO, S&P, and fresh thyme (same for the Brussels) roasted at 400* for 15-20 minutes.

An awesome dinner to end the day. It’s been a tasty Tuesday you guys.

Oh and I almost forgot…


A friend of mine, Max, sent me a picture of his dinner and told me to put it in my blog and… yeah. So if anyone ever needs some eggs, brown rice, and salsa in their life Max is your go to guy!
