First off, I’d like to say that Wednesday was a wonderful day of eats. However, I caught the lazy bug and didn’t snap a single picture the whole day. You win some, you lose some.

Aside from Wednesday, Thursday wasn’t all that bad so let’s dive right in.

Breakfast – 7:15 am


Two pieces of Ezekiel toast + Barney Butter almond butter on one & PB&Co. White Chocolate PB on the other + nanner slices + chia seeds + coconut

Workout – 8:50 am



If you don’t already know, I’m training for my first half-marathon in Charlottesville, VA on April 6th. Accidentally, I began my training plan a month early (whoops!) so the past few weeks I took a break from long runs.

Well, yesterday I decided to get back into training with a 10 miler. Before starting my run I knew if I could do 10 miles then I would be able to do the extra 3.1 on race day. IMG_4707


Surprisingly enough those 10 miles went by way faster than expected and I felt great the whole way through. My goal was to stay under 9 minutes per mile and just finish. Goal attained.


During my run I stopped for water every time I ran past my car which ended up being three times and then I nommed on some Sports Beans at miles 3 and 7.



On my next run I think I’ll switch back to Honey Stinger’s chews. They were a lot easier to eat during my last long run.

Running is almost completely a mental sport. It’s not about how fast you go or how far you it’s just that you go. My mind is in total control of my body when I run; if my mind is in the right place then my body will follow suit.


As soon as I got home I downed a pineapple coconut water to replenish my electrolytes — tasty tasty — and then got to work on lunch.

Lunch – 11:45 am



Roasted veggies, yes please!


Jennie-O turkey burgers have been quite the popular protein choice ’round these parts lately.


Spring mix + roasted zucchini, grape toms, sweet tater with rosemary + Jennie-O turkey burger + goat cheese + red onion + balsamic reduction 

I wish I could have this salad again…right now. Darn Lent and Fridays.


Not a single snack was photographed yesterday. My apologies! But I did graze a little throughout the day with a Peanut Butter Cookie Luna bar, some mixed nuts, and an orange. All very satisfying.

Dinner – 6:30 pm


Slice of Ezekiel + TJ’s cookie butter microwaved for 10 seconds

A serious craving for bread — specifically buttered rolls from O’Charley’s (Oh, how I love those things.) — struck as I was fixing dinner.


Three egg white scramble with shredded carrots + spinach + shredded mozzarella + ketchup


Before I dug into my egg white scramble I realized I had to crumble the remnants of Cheesy Garlic Bread Lays on top. Seriously, I had to.

I mean, I ran 10 miles after all. 😉

Dessert – 8:00 pm


Dark chocolate chips

Of course, I couldn’t end the night without a taste of dark chocolate.

The rest of my night was spent being a college student with some awesome girls out in Ttown.
