Spicy Basil Hummus

Hey guys!

Today marks day five of my Conscious Cleanse and I’m sticking to my guns! I’ll be posting a week one recap so stay tuned. viagra england Breakfast was a green smoothie with frozen banana and mango, blueberries, kale, romaine, goji berries, almond milk and water. Delicious.


After I gulped that down I headed to my favorite yoga class at Yoga Bliss in downtown Tuscaloosa. Good music and lavender oil is key to an awesome yoga class, so I’ve learned. (Lavender oil for shavasana, by the way.)

Ok ok. On with the purpose of the post!

Spicy Basil Hummus



  • 1 16 oz can garbanzo beans, reserve liquid*
  • 3 cloves garlic, finely minced
  • 1/3 c chopped fresh basil
  • 2 Tbsp extra virgin olive oil
  • 2 tsp red pepper flakes (or to taste)
  • 1 tsp salt (or to taste)
  • 1/2 tsp pepper (or to taste)


Toss everything in a food processor and pulse until smooth. *Add remaining liquid until desired consistency.


Best enjoyed with warm pita bread or carrots. Yum!

Happenings + Banana Bread with Raisins Recipe

Good morning peeps.

Let’s dive right in to yesterday’s happenings.




This is a recycled photo but basically the same thing as yesterday: Greek yo, strawberries, Kashi, Newman’s Own Flax Flakes, and shredded coconut.

I got a Monday morning 5:30am wake-up call from this little ball of fur…


As of this very second I have officially decided that his name is Sir Winston Churchill. Sir, Winnie, Win, Winst…all good one syllable nicknames to call him by. I considered Sirius Black and Severus Snape but when he looked back at me, those names just didn’t fit. Haribo was my second choice after Haribo Gold-Bear because he’s identical to a gummy bear. In the end, Winston wins.



This morning I took a yoga class downtown; fueled by a mini cashew cookie Larabar. The perfect little bite.


This morning’s class was iiiiiincredible. Every class at Yoga Bliss Tuscaloosa is bomb but Monday morning with Kate especially.




Once I got back from yoga I immediately got started on lunch.


On the menu: curried sweet potato chickpea burger (recipe coming soon!) that I mashed/spread onto a whole wheat tortilla with goat cheese, balsamic drizzle, and fresh basil then pressed on the panini maker. Served up alongside sautéed broccoli and zucchini.


A delicious lunch indeed.

After I finished eating I did a few chores around the house, taking breaks in between to read The Happiness Project.


I highly recommend this book! I’ve only read through part of chapter two and it’s already amazing.




I anxiously awaited for my mid-afternoon hunger to kick in so I could have this snack. PB + cinnamon and apple slices is where it’s at ladies and gents. Where. It’s. At.


I did some more chores + reading and then ran a few errands before going out for dinner.

And whaddya know, I forgot to snap a picture of my meal. I even forget to take a picture of the restaurant we ate at. (BTWs De Palma’s house salad with chicken and croutons is one of the best salads in Tuscaloosa.)

Ok ok. Now for what you’ve probably been waiting for. Bless you if you read to this point instead of scrolling down to begin with.

Banana Bread with Raisins



  • 1 c. whole wheat flour
  • 1/2 c. rolled oats
  • 1/4 c. flaxseed meal
  • 1/3 c. sugar
  • 1 1/2 tsp. baking powder
  • 1 tsp. baking soda
  • 2 tsp. ground cinnamon
  • 1 tsp. ground cloves
  • 1/2 tsp. salt
  • 2 medium bananas
  • 1/3 c. plain Greek yogurt (vanilla or banana flavor would be good, too)
  • 1 egg
  • 1 tsp. vanilla extract
  • 2 Tbsp. honey
  • 1/2 c. raisins
  • 1/2 c. chopped walnuts (optional)

Preheat the oven to 350* and spray a 9×5″ baking pan with nonstick spray. In a large mix bowl mix together all dry ingredients and set aside. In another mixing bowl, add bananas and mash with the back of a fork and then add remaining wet ingredients and stir to combine. Add wet to dry and stir just until incorporated. Fold in raisins and other optional ingredients then evenly pour into baking dish. Bake for ~40 minutes or until a toothpick can be inserted and come out clean. Let cool and enjoy with a generous slather of peanut butter!

Damsels in Distress

Goooood evening err body.

Like I mentioned earlier, Mom and I did a stretching based yoga class this morning at Hot Yoga of Huntsville.


We held each pose viagra generic 100mg for 3 minutes and it was marvelous. Talk about some serious relaxation during shavasana.

After yoga both of our stomachs were rumbling — I’m pretty sure they could be heard during class — so we went to Panera for lunch.


I ordered the spinach power salad sans fried onion and bacon, add chicken, dressing on the side, and whole wheat baguette instead of white. It totally hit the spot along with a hot tea, mmm.

We got pedicures before heading back home as a cherry on top.

Alrighty. Recall my mentioning a 40 mile bike ride in this morning’s post? Yes. Let’s talk about that.


My mom and a group of her friends had planned on biking the Chief Ladiga Trail, which stretches form Jacksonville University to the Georgia line then connects to the Silver Comet Trail, and I tagged a long with.


The trail were great — paved with lots of shade and mile markers the whole way. The plan was to bike from Piedmont to Weaver then back track and stop in Jacksonville for lunch.

When we got close to our turn around spot, which was 18 miles out, Karen noticed that her front tire was low on air. Luckily, we stopped right outside of a car place so she took her bike to get air pumped into it. Unfortunately, instead of pumping air it did just the opposite, leaving her tire completely flat. Fail.

As our next attempt to salvage her tire, we walked over to the only gas station in the small town of {dream} Weaver to see if the tire pumping machine there would work. Close, but no cigar. At this point we felt as though we were out of options until a handsome young gent biking on his lunch hour stopped to assist we damsels in distress.

He change the tube on her wheel thanks to Jill being completely prepared with all of the tools. Finally we could head back! But wait…that didn’t work either. We thanked the minister (he informed us of this when he offered Karen a ride back to Piedmont) and then he was off and we were left back at square one.

An hour had passed and we were officially starving, when two men approached us (both with bikes). Apparently, they had watched everything play out before deciding to offer a hand. Long story short (kind of?), they road to Jacksonville where their truck was and then came back to swap one of their bikes for Karen’s and agreed to meet us back at Piedmont to switch back up.

With everyone back in the saddle, we took off in search of FOOD. Hallelujah!


Another 6 miles to lunch spots and boy were we hungry! After lunch we realized we had another 12-13 miles left until we were finished with our ride and so we were off, yet again.

The ride back was brutal. I couldn’t tell you what hurt worse; my butt or my thighs. When we got back Ben, our hero, was waiting for us. We returned bikes and thanked him for being so kind. Thanks again, Ben!

After a day like that there was only one thing that we could do.

So we stopped at an ice cream shoppe on our way back home and all was well in the world.


After a day like that everyone agreed they had gotten their bike fix in for a while, haha.

Back to the now, it’s currently raining outside so I think it’s time to kick back and crack open a good book. Nighty!

Quite a Thursday

Hey there friends!

My mom came down earlier today to hang out before my dad makes his way down in the morning and then all three of us head to Baton Rouge. Needless to say, I’ve had quite a Thursday!

Yesterday toast + PB + nanner; today Greek yogurt + fruit + granola. Why change what ain’t broken, right? Today’s yogurt bowl went sans PB. Gasp, I know, but my nut butter stash is running free viagra samples low and nothing else sounded good so I opted for chia seeds and Bare Fit granola instead.


Can’t forget about the coffee!

Workout 1


After CrossFit and date with my foam roller last night, I was feeling better than expected so I went for a quick and easy mid-morning run.

Forgot my camera or else I would have more pictures. It was so so pretty outside today and just perfect for running.

For lunch I threw together roasted Brussels sprouts + sweet potato, a can of diced tomatoes, two wedges Laughing Cow cheese, and balsamic glaze. The can of diced tomatoes was out of the ordinary yet really good.


Seasoned everything with a generous amount of hot curry ’cause I like it spicy. 😉


I crumbled a couple pieces of bran crispbread on top for a little texture and a tasty lunch it ’twas.

P.S. Those bran crispbreads are a staple in my pantry — perfect as croutons in a salad.


Almost immediately following lunch I had a tiny bowl of yogurt covered raisins. I swear it’s like I HAVE to eat them if they’re in my possession. Sooooo good!

Once I polished off my raisins covered in goodness the doorbell rang and Mom and Sophie were here, yippee.

Once Mom put her things down we headed out the door to run a few errands.


I upgraded my phone — yay for the iPhone 5! –and then we walked over to Manna Grocery to browse around. Of course we bought more than browsed but that’s just what happens when you take me to a health foods store.


Scored some local strawberries that I’ll be devouring tomorrow morning for breakfast.



My stomach was rumbling after running errands so I made myself a snack. Apple slices and a piece of a peanut butter cranberry bar I snagged at Manna hit the spot.

Workout 2


My mom is recently a yogi so we hit up Yoga Bliss for what was suppose to be a hot class but they were having problems with the furnace. Imagine the heating and cooling people getting a phone call during summer in Alabama complaining about the furnace not working, haha.

Anyways, the class wasn’t hot but it was still great.

After yoga we walked up the street to Big Daddy’s for dinner. Greek salads, hummus and pita plus this little gem to go…

Time to Bust Out the Grill

Hey friends! How’s your Tuesday going? Mine started off with a one hour hot yoga flow with my mom and dang, it a tough one!

I’ll talk more on that tomorrow, so let’s rewind back to yesterday.

Greek yogurt + Kashi GoLean + Bare Fit + strawberries + PB

Oh breakfast, how I look forward to our morning time together. Especially during the summer time when strawberries are in season! If you’re in the Scottsboro area keep your eyes peeled no prescription viagra sale for the boxes of strawberries from the farmer’s stand across from CVS. They’re the best strawberries in the whole entire world, trust me.


Before I got the ball rolling on my workout yesterday I had a little sweet potato energy ball thingy that I made up the night before and had planned on sharing if they were good. Well, no bueno on this batch but I’ll be trying again soon!

Back to the workout. I worked on bis and tris and threw some bursts of cardio into the mix and boy was it a good one!

Bis & Tris with Cardio

5 minute jog

Set One
15 preacher curls
15 triceps kickbacks 
1 minute run at incline 1
repeat 3-4 times

Set Two
15 bicep curls
15 overhead triceps extensions
1 minute run at incline 2 & bump speed up 0.5 mph
repeat 3-4 times

Set Three
15 hammer curls 
15 chair dips
1 minute run at incline 3 & bump speed up 0.5 mph

Cool Down
5 minute jog followed by 1 minute walk and stretching

I completed each set three times before moving on to the next one and started my 1 minute runs at 7.0 mph. All and all this was a great workout and perfect for someone in a time crunch who’s looking to get in strength training and cardio!

Spring mix + California veggie burger + tomato + shaved carrot + Wickles + goat cheese + Nut Thins sea salt chips + balsamic reduction

Yesterday’s lunch really hit the spot. Lately, I’ve been all about vegetarian burgers. Not sure what the deal is on that one but I’m ok with it. However, beef burgers are on the menu for dinner tonight and I am puuumped!

Alright so this slice of carrot cake should probably be in the category above considering I ate it shortly after lunch but whatever. It’s going to suffice as a “snack” anyways.


A little while later I felt my stomach rumble so I grabbed two small apples.


If you can’t already tell, I was feeling rather snacky yesterday. 🙂

Originally I had planned on whipping up some guacamole to go along with my sweet potato-black bean enchiladas for my mom’s birthday but the avocados weren’t quite ripe on Saturday. Whamp whamp whamp. I set them beside a couple of bananas on the counter so they could soak up some ethylene and ripen faster. Anyways, yesterday they were perfectly ripe so I took advantage of the opportunity and made guacamole.

The Best Guacamole



  • 3 ripe avocados
  • 3-5 cloves finely minced garlic
  • juice of 2 limes
  • 3-4 T of your favorite salsa
  • 1/4 c chopped cilantro
  • S & P to taste


Mash avocados and then mix in remaining ingredients. Enjoy with some multigrain Scoops or fresh veggies!


Finally time to bust out the grill!


With the grill on my mind during my cool down jog, I quickly texted Mom and asked her to pick up some salmon filets for dinner.


Check out the size of those filets! And Mom said she had to ask for the small ones.

Stephen kept me company while I handled the grill. He probably won’t be too excited when he sees the picture above.

We kept things light and had grilled summer veggies alongside the salmon.


I brushed EVOO on the salmon and then seasoned it with a Greek seasoning we had on hand. The veggies were tossed in EVOO and S & P as well as a little bit of the Greek seasoning.

Not to brag on my grilling skills or anything (I rarely use the grill except for when I grill pizza) but last night’s dinner was deeeeeelicious!


Even my dad was tickled at how tasty everything was, haha. 😉

Other Things of the Day

Last night Stephen and I watched The Impossible and it was a really awesome movie. A little gruesome but very eye-opening to all the things we have to be thankful for, specifically family.


Fast-forwarding back to today, I am taking the final exam for my AFAA personal training certification. Yeah, just when I think I’m relieved of exams because school is out I have to guess again. Not going to lie, I’m a little nervous about the exam but SOOO excited to think that this time tomorrow I could be a certified personal trainer, eeek! Wish me luck! 😀
