Good morning friends! Last week I did a Thursday Things post and really enjoyed it so here’s another go at it.

Just the Jist

Hello and happy Monday peeps! I hope everyone had a great weekend.

My grandparents visited this weekend as well as some Vestavia chicas. Gotta love a weekend full of visitors, am I right?



Sophie loves visitors so she had a great weekend, too.


Well, minus her kitchen sink bath…


Last week Madre and I gave my house a little freshening up. Nothing too drastic, just some organizing in the kitchen and my closet.

Organizing is one of my talents. I don’t have very many but I can clean and organize like a beast. Since I could probably talk for days about every nook and cranny that I have organized in my house, I’ll spare you the boredom and give you just the jist of things.

Starting with my kitchen shelves…


There isn’t a whole lot of cabinet space in my kitchen so we purchased this adjustable shelf at Home Depot for only around $100.


At the very top of the shelf I keep my reusable shopping bags in that black bin which is on top of a wooden pizza serving piece. The two wicker baskets just below hold plastic baggies and then dog treats for Soph. Beside those I keep my colored baking ramekins, bowls, and then a salad bowl with napkins.


Next, I have all of my serving ware, most of which came from Old Time Pottery. Hello money saving! At Lowes we had a piece of plywood cut to lay on this shelf so I could add a shelf riser for ample space saving.


Just below all of my plates and things I have flours, nuts, quinoa, and a couple of other stuff stored in canisters from Target. Next to those is an empty wicker basket for one of my roommates to keep their pantry items. Then, last on the shelf is a fruit/veggie basket where I keep sweet potatoes, garlic, tomatoes, and other things of the like.


Moving on to the last two shelves, I have three more wicker baskets for my roomies and me to keep our pantry goodies in and then my large pot, dutch oven, panini press/grill/griddle (<— amazing apliance), and then coozies for those cold drinks. Heh heh.

Having an exposed shelf like this in my kitchen freed up a TON of space in the cabinets and drawers. Perfect for when I acquire more kitchenware. 😉

Ok. Now for my closet!


I know…I have way too many clothes.

As soon as you walk in to the right I have a hanging shelf for tees, workout/lounge pants, shorts, and sweater. Next to that I keep all of my long skirts and dresses. On the wall I have most of my costume jewelry and then room for hats and such just above that.

Starting with the first picture, I have most of my nicer shirts, long sweaters, jackets, and tanks hanging. I have everything in order according to sleeve length and then color. The next shelf has skirts and dresses, also organized based on style and sleeve length. Then on the end I have my belts on a belt/tie hanger from Target.

I’m in the processing of switching all of my hangers over to black velvet hangers vs. plastic. The velvet helps prevent things from sliding off. I scored most of my hangers from Ross for waaay cheaper than Target or Bed Bath & Beyond. Marshall’s and Hobby Lobby should have the velvet hangers at a good price also, I’m sure.


Please excuse my laziness and clothes waiting to be put away on the floor. 

Underneath my hanging clothes I have my SHOES! My mom just redid her closet and was going to get rid of these shoe cubbies until I got ahold of them. Score. They work perfectly for storing all of my shoes as well as shoe bags, gloves, and small jewelry boxes for my nicer pieces.

In the bottom right-hand corner of the picture I have all of my pullovers and heavier jackets in a box underneath my bags and purses that are in a wicker basket from Pottery Barn.

Just above my shoe cubbies I have a basket full of workout DVDs and other gear. To the left of that I have a set of adjustable dumbbells and then two smaller wicker baskets, also from Pottery Barn, that store my sunglasses and cords and etc. for all of my cameras and electronics.

And now for my favorite part thus far…


…my jewelry cork boards! Having the rest of my jewelry displayed on cork boards makes it loads easier to keep things from getting messy. Also, I can see everything a lot better when it’s out like this so I wear more and don’t forget about pieces.


Lastly, I keep boxes with winter boots on top of my shelf. Along with my suitcase and ClosetMaid bins that store socks, swim suits, running shorts, and hats. Anything else that’s out of season (scarves, other sweaters, turtle necks, etc.) I keep in boxes underneath my bed. T shirts, PJs, and other random things I have in a dresser in my room.

Tasty Tuesday

What is up everyone? Such a lovely day on this fine Tuesday.

This morning when I was leaving the house it was still yucky outside so I chose my rain jacket over my sunglasses — total mistake because the sun is finally out and shining.

Breakfast was enjoyed while walking to my 8:00 am chemistry lab thanks to my alarm neglecting to go off. Don’t you hate that? Thankfully, I woke up and 7:07 am, had a mini panic attack, and then got myself ready and out the door by 7:36 am. Oy.



Steamed sweet tater & zucchini + leftover Jim N Nick’s smoked turkey & croutons & BBQ sauce (< weird flavor alert) + goat cheese

Lunch was probably one of the weirdest flavor combinations ever — and I’ve had some pretty strange combos — but it turned out delicious!



Grande skinny vanilla latte (new Starbuck’s favorite) + dried apple 

On Tuesdays after my chemistry lab I usually head over to Starbuck’s and this morning was no different.

I also had a trail mix Mojo bar during my food science lab as a little fuel before my run and then the other half of banana from breakfast after my run. Neither of which that got photographed. Whamp whamp whamp.

Workout – (Monday & Tuesday)

Here’s today’s run. Originally I had planned on going at least 5 miles with the hopes of 6 miles but my legs were dead from yesterday so I cut it off at 3.4 miles. Good enough for me considering I have quite the load of chemistry to study tonight. Bleh.



Roasted acorn squash & Brussels sprouts + pan seared salmon + drizzle balsamic vinegar

So this meal pretty much rocks. I say that because I’m still eating it and wishing it will never end. Fingers crossed.


Salmon seasoned with S&P, fresh thyme pan seared with some EVOO and then thrown under the broiler.



Acorn squash halved and seeded then seasoned with EVOO, S&P, and fresh thyme (same for the Brussels) roasted at 400* for 15-20 minutes.

An awesome dinner to end the day. It’s been a tasty Tuesday you guys.

Oh and I almost forgot…


A friend of mine, Max, sent me a picture of his dinner and told me to put it in my blog and… yeah. So if anyone ever needs some eggs, brown rice, and salsa in their life Max is your go to guy!

After days of not being able to access my blog it finally decided to cooperate this morning!! Amongst other exciting happenings of today–I parallel parked for the first time (successfully), officially joined CrossFit Tuscaloosa’s box, and it’s the BSC National Championship game tonight! Roll Tide! (I’m also Catholic so I can’t get too ugly towards Notre Dame ;)).

ANYWAYS. So much stuff to share with everyone–townhouse is THIS close to being unpacked, decorated, and organized.

What I Ate Wednesday

Breakfast – 8:00 am


Cereal combos never fail. Especially this new one that I’ve been enjoying the past few days.

1 c Kashi GoLean Crunch + 1/2 c Nature’s Path Multi-bran Flakes + 2 T PB2 + 2 T dried craisins & apples + 1 small pear + 1 c unsweetened vanilla almond milk = :D 

Definitely making this a staple amongst the cereal combo rotations.

Midmorning Snack – 11:00am



My chemistry final was scheduled for 11:30 am yesterday and I knew I had to get something in my belly before since there was no telling when lunch would be. Thankfully, I had a ripe banana annnd a nearly empty jar of Justin’s maple almond butter laying around. I broke up the banana, threw it in the jar, and ate it with a spoon on my way out. Perfect snack then ended up being surprisingly filling.

Lunch – 2:00 pm


Lunch was later than expected considering I spent ONE HOUR AND FORTY MINUTES taking my final. I tell ya, if I don’t pulled at least a B there will be some unladylike words on this side of the screen.

But anyways, lunch was pretty darn good and vegetarian!

Amy’s Swiss Chard & Polenta frozen meal + steamed broccoli + steamed green beens

After being a veg for nearly two years, I thought going meatless a few days out of the week would be no problemo. I was sooo wrong. Chicken is just too good (when it’s hormone-free, antibiotic-free, and organic if possible ;)). I’m sorry for neglecting to eat you for so long, forgive me? 

Dinner – 6:30 pm 


Since Stephen, my surprise visitor, got in town a little later than expected, I opted for takeout instead of waiting around for him and risking getting hangry (hungry leads to angry which results in hangry, get it?). Moe’s sounded good so I went with it.

Salad with black beans + chicken + grilled peppers, onions, & mushrooms + cucumbers + cilantro + pico + shredded cheese + pickled jalapeños + southwest dressing & salsa on the side

Shortly after I polished that off the boyfriend arrived so I had to go check him in (#allgirlsdormprobz) and then we got ready for our outing that I had been looking forward to allllll day.


I made Stephen draw out of a pile of places to go for dessert and he drew…


New place!

Dessert – 8:30 pm

IMG_3370_2New place froyo! There are like five different froyo places in Tuscaloosa – all very good! – including a new one down by the River Walk called Orange Leaf. I was actually glad Stephen drew Orange Leaf because I had been wanting to check it out ever since its grand opening.

The frozen yogurt was reallllly good but they were seriously slacking in the toppings department which is my favorite part! No cookie dough bites?! You’re kidding me…And they weren’t. But the girl working did say the cookie dough was coming soon. Guess I’ll just have to go back and make sure the cookie dough bites got there. 😉

IMG_3371_2He always gets the fruity stuff while I go for the cookies and chocolate. Gummy worms just do not appeal to me as well as Oreos. Mmm. 🙂


We’re just too good lookin’, huh? 😉


Workout – 5.3 mile run on the treadmill 

I took a break from Pinterest studying and headed to the Rec for a run on the treadmill. I was having a tough time deciding between the Rec and outside since the weather during my run Monday night was perfect. As soon as I stepped outside and felt the wind my decision was made and the Rec it was. I spent my time on the treadmill doing Kristin’s 5-4-3-2-1 55 minute routine. That one is an ass kicker in a great way. 

And that’s my Tuesday. Now I’m off to study for my Women’s Studies (humanities credit :|) final tonight! Wish me luck!
