Wednesday Words {of wisdom} + #stoopidheadforever

Goooood evening and Happy Hump Day everyone!

You may wondering what I’m getting at with this post so let me explain…

Since my post about deciding to move forward from my disordered eating and body image issues I thought it might be pfizer mexico viagra cool to share what I’ve learned thus far during my struggles and triumphs. So to start of my Words of Wisdom, I’d like to say that this is not about “turning over a new leaf”.

Actually, it’s quite the opposite. Which brings me to my first realization:

No more turning over new leaves. 

You see, every time I felt as though I had ruined my diet or workout regime I would immediately say to myself “Ok, it’s time to turn over a new leaf and get a fresh start on a new you”!

What’s so bad about that?

Well, it becomes a problem when you’re continuously having to turn over a new leaf. I ended up putting myself in a constant cycle of one extreme to the other because I was set on perfection which, in the end, only led me to failure. 

I have decided that my Peachy Post will be the last leaf I’m turning over on my journey to a healthy balanced lifestyle. The point that I’m getting at is there is no such thing as perfection. Mistakes are part of life and an indulgent dessert or missed workout is not the end of the world!

Got that? Good.

Breakfast

(Pretend that one of those is crunchy almond butter and the other is cashew butter.)

It seems most of the morning meals ’round these parts are either Greek yogurt + fruit + granola + PB or toast + nut butters + banana slices. Just pointing that out because, if we’re being honest here, it probably won’t change for a while.

Snack Part One

A little before lunch I snacked on a handful of grapes to tide me over. It’s been a while since I’ve eaten grapes and I swear I forgot how good they are. Mmm, so sweet.

Lunch

Since I’m a lazy butt and didn’t make a trip to the grocery store before lunch I was forced to throw together what I already had on hand. Thankfully, I had baby kale that was still good chillin’ in the fridge as well as a VitaPizza, frozen peas, and marinara sauce. I am aware that the combination of all of those may not sound so appealing but lemme just tell ya, it was delicious.

Snack Part Two

After lunch my snackiness struck again! Part two included a teeny tiny apple and a generous “few” yogurt covered raisins.

Workout

Today was a CrossFit kinda day so I laced up my new Reebok Sublites and headed to the box.

20 push ups
20 pass throughs
20 sit ups

WOD

10 rounds for time:
10 wall balls @ 20/14
10 burpees

Score: 18:21

If a WOD looks easy then it’s going to kick your ass. Every. Single. Time. In case you aren’t that great with numbers, 10 rounds of 10 wall balls and burpees adds up to 100 each. In other words, there will be a lot of foaming rolling going on once I’m finished with this post.

Snack Part Three

As soon as I got back to my car after CrossFit I tore open a Kashi granola bar for some refuel. You know you had a good workout when it’s difficult to eat a granola bar…

Dinner

After CrossFit I finally made a trip the Publix to pick up a few things for dinner. Normally I would have made a grocery trip to stock up for a week+ considering the state my kitchen is in but I’ll be heading out of town AGAIN on Friday morning so this trip’s bounty was light.

On the menu for dinner was spring mix, roasted Brussels sprouts, Mediterranean lentil salad, and goat cheese. Oh and can’t forget the balsamic glaze!

Other Things of the Day

Whilst snacking on a handful of grapes before lunch today a Twitter notification popped up in the corner of my screen. In awe I clicked to make sure what I saw was real…

Turns out the fam jam (read: Mom and Dad) and I are trucking over to Baton Rouge to meet up with the cuzzo for the Bayou Country Superfest. Since I’m a Hootie fan and all (duh) I’m most excited about seeing Darius Rucker. Bonus: Wagon Wheel is one of my all time favorite songs so I’m pumped to see Darius play his cover of it live. Life is just too good.

Time to wind down with a little HGTV and foaming rolling, yo. Hope you had a great Wednesday! Nighty.

After breakfast, I did some studying in preparation for my PPT practical exam. Did you know tight hamstrings can cause lower back pain? Well, I had no idea but it makes loads of sense. My hamstrings are extremely tight and I do experience lower back pain after certain exercises.

Lately I haven’t been feeling so good. I woke up the other morning with a sore throat and it really hit me hard this morning so I had some vitamin C in attempt to feel better. However, during class the other day my professor said that some studies say vitamin C doesn’t actually help cure the common cold. Hmm.

Ah, yes, balsamic vinegar reduction! Honestly, I don’t think I go a day without the stuff.

Spring mix + chicken breast + shredded carrots + fresh beet + grape toms + red onion + cucumbers + feta cheese + slice Ezekiel + balsamic vinegar & balsamic reduction 

Whoa baby was this salad huuuge! At one point I even thought I might not be able to finish it. Pah, but of course I finished it…silly me.

If I didn’t go to crossfit today then I probably would have gone sans snack before dinner. My ginormous salad from lunch really held me over but I knew I need a little something before getting my WOD on.

Sheesh. Today’s workout was serious. It was one of those that makes you feel like jello afterwards. So much that I could hardly hold my blender bottle while drinking my favorite post-workout drank.

Quite the exciting meal, huh? This was last Monday’s dinner that I had right before a quick five miler. Those five miles were all under 8 minutes and were the only form of exercise I took part in last week…other than dancing. 😉

Happy New Year!!

Did everyone eat black eyed peas today for good luck in the new year?

My parents and I headed over to our friends Bill and Shelley’s house for some good New Year eats. Bill is one heck of a cook – he made black eyed peas, collard greens, and homemade pasta with spicy sausage. Bill and Shelley just got back from a trip to Italy so Bill had to put his pasta making skills to test. He passed with flying colors in my book and was nice enough to let me take some of the raw pasta home (apparently it stores well in the freezer). Might have to take credit for the pasta if I serve it to company. 😉

photo-18How cute is this dog? Bill and Shelley’s dog, Puella, was cozied up in her gigantic bean bag bed the whole time we were over.

Ok, now it’s time to recap yesterday’s happenings starting with:

Breakfast (of course)

IMG_3701Newman’s Own Honey Flax Flakes + Nature’s Path Multigrain Flakes + PB2 + unsweetened coconut flakes + raisins + blueberries + banana slices + unsweetened vanilla almond milk

Quite the massive combo, I know, but trust me it hits the spot.

Lunch

IMG_3715After piddling around with the ole blog for a few hours and basically being lazy as ever, I decided to fix lunch.

Mmmmm. Doesn’t get much better than roasted vegetables. Until you add goat cheese and balsamic vinegar reduction. 🙂

IMG_3747Mom and Dad spent the fist half of the day in Huntsville picking up furniture for the townhouse (!!!) and somewhere along the way Mom bought a harness for Sophie. We put it on her and she would.not.move.for.anything. She completely forgot how to walk as soon as it was on. It was actually pretty hilarious. After a few minutes I started to feel bad for her and had to take it off.

IMG_3759The day finally started to get productive after I ate the other half of my banana + Justin’s maple almond butter for an afternoon snack. Fuel was needed in order to accomplish the task I was about to take on…

IMG_3763I picked out all the spices I’ve accumulated since I began cooking plus a few others I know have/will never be used unless I claim them.

IMG_3764You’d be shocked how many of the same spice one can own. Majority of which are all barely used or unopened. C’mon Mom.

As if I was going to stop there…

IMG_3771It was dark and gloomy all day so I scratched off any plans of working out for the day. Might as well get all my laziness out before the new year, right?

Speaking of the new year, my parents and I both had some of our friends over for football and appetizers.

IMG_3777For my dinner (if you could even call it that) I started with the photo above and then picked at the appetizer table later on. That muffaletta was highlight of the night’s eats. Thank goodness for leftovers!

Only thing that would have made the night better would have been a win for LSU but I guess we’ll have to wait for next year before we see another one of those.

Week in a Wednesay

Hello everyone! My apologies for going MIA the past week. I’ve been enjoying my time at home so much that I put my computer on the back burner. However, I still managed to keep my camera in mind so I could show you all what I’ve been up to!

Friday – Homeward Bound

Friday morning after CrossFit I made my way home for the break – leaving my cozy dorm room behind. Before I completely over packed up my things I thought I’d snap a few pictures of my room so 1) I’ll remember where everything goes when I get back and 2) because I’m a little obsessed with it.

IMG_3399Once I arrived in my old stopping grounds I immediately started a pot of coffee to sooth a killer migraine.

IMG_3410Whilst sipping on my pipping hot mug of caffeine and reading Kristin’s Friday Favorites mom and I saw something that appealed to the both of us: Crock Pot Rancher’s Roast Beef, and so dinner was decided.

Saturday – …

The only somewhat exciting thing that happened on Saturday was a comfortable and chatty 3.5 mile run with Mom.

Sunday – Christmas Cookies Atlas! 

After church on Sunday I summoned one of my best friends, Emelie, to the house for some Christmas cookie baking and catching up.

IMG_3438 IMG_3439We sipped chocolate peppermint coffee with a splash of eggnog and listened to Christmas music on Pandora while we baked.

IMG_3450 IMG_3452Unfortunately, there was no such thing as a gingerbread man cookie cut-out or any festive cookie cut-out for that matter in the house so we made due with hearts, squirrels, and acorns. (Squirrel and acorn courtesy of Madeline, love you!)

photo-15We also whipped up these little beauties pictured above. So dangerously delicious especially after warmed in the microwave for 15 seconds. Don’t even get me started.

Monday – Winner Winner Chicken Dinner 

Stephen and I made a trip over to Huntsville to run a few errands and pick up some groceries at Earthfare for dinner – which ended being a total success by the way.

Goat Cheese + Hot Pepper Raspberry Chipotle Sauce Stuffed Chicken

IMG_3485Whoa mama was this chicken off the wall tasty!

Ingredients

  • 4 butterflied boneless, skinless chicken breasts
  • 1/2 cup goat cheese
  • 1/3 cup hot pepper raspberry chipotle sauce
  • S&P
  • EVOO

Directions

Preheat oven to 375F. Mix together cheese and hot pepper sauce and set aside. Season chicken with salt and pepper and stuff with cheese then drizzle extra virgin olive oil on top. Bake for 30-35 minutes or until chicken is cooked through.

Serve along side roasted balsamic brussels sprouts and finger link potatoes. Mm mm mmm.

Tuesday – CrossFit with Dad + Breakfast

Tuesday morning I whipped up two breakfast sandwiches for me and the pops before we headed out to our first day of the CrossFit Intro course that we’re taking together while I’m home for break.

IMG_3490For me: toasted english muffin + Morning Star soy sausage patty + egg white + leftover goat cheese & hot pepper sauce.

This breakfast made me remember how much I enjoy savory morning meals.

Wednesday – Leftover Lunches Rule

This morning Dad and I had another intro class at CrossFit Huntsville. So far so good! I think my dad is enjoying it more than he puts off but who knows. Even if he isn’t, I know I sure am and having him there makes it all the more! 🙂

Again, no pictures from CrossFit – promise I’ll try and remember to take a few on Saturday!

When I got home from CrossFit I cleaned and organized the entire kitchen, refrigerator, freezer, pantry, and my room. Sheesh! You would’ve sworn a heard of elephants (Roll Tide?) ran through my room. After I finished cleaning I showered up and tended to my rumbling tummy.
